Hamburger Cupcakes

Happy Memorial Day!  What a beautiful weekend it was to give thanks to our American soldiers and to celebrate our country!  The weather was gorgeous, the food was scrumptious and the drinks overflowing.   Memorial Day weekend is always a time for us to hang out with friends, enjoy the outdoors, and eat good food.   And the food of choice… hamburgers and hotdogs on the grill.    There is nothing better than your first cookout of the season and enjoying all the BBQ fixings and foods…YUMMMMY!    Since burgers are a popular go-to food to kick off the summer with… and since a party isn’t complete without a sweet treat…I combined the two and made these tasty, charming,  All American Hamburger Cupcakes!

Aren’t they so cute??   I saw this idea on The Martha Stewart Show last year and thought it would be a fun goodie to bring along with us to a  pool party.

First you bake brownies (I used a box mix and baked in a 11×9 bar pan lined with tin foil) and yellow cupcakes (I made 15 regular cupcakes and 18 mini cupcakes).  Cool completely, and then cool some more, then cut in half to make a bun.  Use a circle cookie cutter and cut out your hamburger patties from the brownies.    In a plastic bag, mix 1  cup of coconut and a couple of drops of green food coloring together to tint the coconut for the lettuce.   For the ketchup and mustard you can use  pre-colored frosting or white icing tinted with foot coloring.  Spread over the top of your burger to resemble ketchup and mustard.   To finish the look off, add some sesame seeds to your buns.  Brushing water on the bun first, helps the sesame seeds stick to the bun.   And there you have it… an  adorable, sweet  little  hamburger!
